About our lab
The Fichman Lab, located at the Hebrew University, Rehovot Campus, is dedicated to the development and study of advanced bioinspired materials for food and health applications. Our interdisciplinary research integrates chemistry, biology, and materials science, focusing on the remarkable properties of self-assembling peptides and single amino acids. We utilize these molecular building blocks, either as standalone systems or in hybrid formulations with polysaccharides, to create innovative materials such as hydrogels, films, and emulsion stabilizers.
Through multi-scale investigations spanning nano-, micro-, and macro-dimensions, we aim to unlock the full potential of these materials and bridge the gap between fundamental discoveries and practical solutions. Guided by curiosity and a drive for innovation, our lab is committed to creating novel functional materials that tackle critical challenges in food and healthcare.
